These enzymes are involved in a multitude of physiological reactions
from simple digestion of food proteins to highly regulated cascades
(e.g., the blood clotting cascade and complement systems)
Lactase: digests dairy products
Lipase; water soluble enzyme breaks down
various fats. Lipase is found in the spaces outside cells and has
a role in the metabolism, absorption and transport of lipids throughout
the body. Biological membranes are integral to living cells and are
largely composed of phospholipids, lipases play very important roles in
cell biology. Furthermore, lipases are involved in diverse
biological processes ranging from routine metabolism of fat to
inflammation.
Cellulase, fat soluble, breaks down glucose and
fiber. Most animals (including humans) do not produce cellulase in their
bodies, and are therefore unable to use most of the energy contained in
plant material.
Maltase: produced in the lining of the small
intestine, is a catalyst to other enzymes and vitamins. Breaks down
carbohydrates. Maltase is secreted by the surface cells of the villi,
which are thin projections on the mucosa. These are found throughout the
small intestine, but differ in shape in the duodenum and ileum sections.
Invertase, breaks down sugars, glucose and fructose.
It is also synthesized by bees, who use it to make honey from nectar.
Papain, derived from papaya, breaks down
various meat proteins. It consists of 212 amino acids stabilized 3
disulfide bridges. In immunology, papain is known to cleave the Fc (crystallisable)
portion of antibodies from the Fab (antigen-binding) portion.
Pepsin; breaks down different types of protein. It
can digest up to 20% of ingested carbon bonds by cleaving
preferentially after the N-terminal of aromatic amino acids such as
phenylalanine and tyrosine.
